Pili pili recipe

Preparation: 10 minutes
Cooking: 20 minutes

Ingredients of the dough

  • 500g of flour
  • 1 yeast sachet
  • 50g of butter
  • 2 eggs
  • peanut oil
  • 1 pinch of salt

Ingredients for the rof

  • 1 bunch of parsley
  • 2 sprigs of chives
  • 2 cloves of garlic
  • 1 teaspoon of black peppercorns
  • salt

Tomato sauce ingredients

  • 4 tomates
  • 1 big onion
  • 2 cloves of garlic
  • 1 pepper
  • 2 tablespoons of olive oil
  • White pepper
  • salt

Preparation

  • Prepare the dough: mix the flour and the baking powder. Add the softened butter, and mix well by hand.

 

  • Add the eggs one at a time to the flour. Mix well

 

  • In a bowl put 120ml of water, add a big pinch of salt. Pour in this water little by little, kneading vigorously, until you obtain a nice homogeneous and non-sticky dough.

 

  • Form a ball, cover it with a cloth, and let stand 1 to 2 hours

 

  • Prepare the sauce: In a thick-bottomed saucepan, pour olive oil, brown the crushed garlic and chopped onion. Add the tomatoes, peeled and cut into large cubes. Salt, pepper, add other spices according to your tastes. Simmer for about twenty minutes.

 

  • Prepare the stuffing: put a little oil in a pan and brown the minced meat, onion, garlic and diced pepper.

 

  • Prepare the rof: chop the parsley, the garlic cloves, the peppercorns, the salt, the peppers if you add any and the chives. You can use mortar or a crushing stone, but an electric chopper is also suitable.

 

  • Add the meat to the rof, and mix. adjust the seasoning if necessary.

 

  • Prepare the donuts: Roll out the dough into a thin rectangle. The thinner your dough, the better your donuts. Cut the dough into squares or small disks.

 

  • Place a little stuffing in the center of these pre-cut shapes, and fold and pinch the edges with a fork.

 

  • Prepare a deep frying bath and fry the donuts in it until they are golden brown on all sides.

 

  • Drain them well, serve with the tomato sauce and enjoy
