Pistachio dish recipe

  • 1kg of dried squash seeds
  • 300g smoked fish
  • 1l of water
  • Salt
  • Banana leaves, twine

Preparation

  • Prepare your banana leaves by soaking them for 5 minutes in boiling water to soften them. Clean the fish, remove the skin and soak them in lukewarm water

 

  • Finely crush the pumpkin seeds, put them in a bowl and pour in half the water

 

  • Salt, and gradually add the rest of the water. Drain the fish and pour it into the terrine containing the pumpkin seed paste

 

  • Place your banana leaves above a bowl and place them crosswise on top of each other (4 leaves = 2 crosses)

 

  • Pour a portion of dough there, gather the ends in the center of the package and tie them with string

 

  • Cook for 2 hours over medium heat. Serve, it's delicious
